Shattering the Spectrum pushes the limits of hop expressions in a DIPA. By pairing a new-to-us thiolized English ale strain of yeast along with NY Cascade hops in the mash to boost tropical and fruit forward aromatics, then layering a trio of Citra Spectrum, Bru-1, & Glaxay dry hops, the result is one of the more unique multi-layered hop experiences we've created.
Shattering the Spectrum has birght aromatics reflecting kiwi, passion fruit, strawberry, wine must, and a hint of dank pine. Flavor mirrors aroma with notes of overripe tropica fruit and candied orange slices, ending with a restrained bitterness and super silky mouthfeel that brings the whole package together in a crushable format.
