As a 7th Anniversary offering, we thought we’d try out a style that’s harder to stumble accross in the craft beer world. Plenty of pale Mexican-style lagers exist on the market, but “dark” versions of the style are few and far between. Many of the mass-produced versions of this style utilize High-fructose corn syrup in order to boost the alcohol content of the beer at a very cheap cost to the brewery. While we’ve decided to keep the recipe for this beer fairly traditional, we've opted to use Maine-grown, heirloom Yellow Flint corn from Maine Grains as our corn sugar source, instead of the traditional Corn Syrup. The yellow flint corn requires a cereal mash to break down/gelatinize its starches and make them available to the enzymes in the main mash for this beer, and so an extensive step mash was utilized in order to grab all of the goodness from these unique KERNELS!
The Kernel pours a deep amber in color, and drinks with a lot of clean malty goodness. If you’re into Vienna Lager, Negra Modelo, or anything in that vein we think you’ll really enjoy this carefully concocted take on the style!
